The... "changes?" of my town.

Uhm... I really can't talk very much of the changes of my town. In the last 19 years that I had lived here, I can remember some restaurants opening and closing, new homes that were constructed... maybe, the most important thing of my town actually, is the electoral college that was installed recently, because we had to go to another town if we wanted to vote.
A thing is clear about my town, and it's a paradise... if you have a job outside. Being a rural town, our workforce doesn't need much specialization, so the salary isn't really good, because you can be easily replaced.
Okey, we can't talk about a "change" at all, but the population has risen meanwhile the work didn't, that makes the town a quite bad place to search job.
My town (if we listen to my grandma), has been transformed from a place where LIVE, to a residential zone, where the people come only to sleep.

Sometimes my parents jokes about this: "there are more cars than people".

As I said in an previous entry, my town is a bit rural, and as a rural zone, my town is a place where everybody loves artesanal sheep cheese.
The cheese need to pass through four different steps of elaboration. There are: curdling, draining, pressing and ripening.
In the first step the cheese needs to throw the liquids (whey), this is made by fermenting the milk adding an enzyme that is located in the stomach of sheeps. Once the milk is fermented, the milk get separated in curds and whey. The curds are drained, keeping only the curds, that before will be compacted by is own weight. Finally, the cheese can pass a process of ripening, or be distributed as fresh cheese.

Ripened cheese usually is more expensive than fresh cheese, however, a lot of people say that ripened cheese is tastier.


How are the people of my town? -> Alhaurín dela Torre.


When I am talking about the people of my town, usually a word appear in my mind: “old”.
Old people is like the most of the entire population of the town, people that wouldn't hurt a fly. The last day I gone to walk along my town, I saw some old people that were talking in the park, the same place where some children were playing football. In general lines, people of my town are friendly, what is really different with the people of Benalmádena, or at least it is what I think, because they are frustrated running from a side to another, without stopping in any moment. I remember that I played basket with my newphews in one of the sport centers, without any problem (in my town), but when I go to Benalmádena with my nephews, I am scared because the people is frenetic, both walkers and drivers. My town is the best place to define the words "big family".
